Vegetable Biryani
Vegetable Biryani is a popular and flavorful rice dish made with a mix of aromatic spices, vegetables, and fragrant basmati rice. Here's a recipe for Vegetable Biryani:
Ingredients:
💝2 cups basmati rice
💝1 cup mixed vegetables (carrots, peas, beans, cauliflower), diced
💝1 large onion, thinly sliced
💝2 tomatoes, chopped
💝2 green chilies, slit
💝1/4 cup plain yogurt
💝2 tablespoons ghee (clarified butter) or oil
💝1 teaspoon cumin seeds
💝1-inch cinnamon stick
💝3-4 green cardamom pods
💝4-5 cloves
💝1 bay leaf
💝1 teaspoon ginger-garlic paste
💝1 teaspoon red chili powder
💝1/2 teaspoon turmeric powder
💝1 teaspoon biryani masala powder
💝A few strands of saffron soaked in 2 tablespoons of warm milk
💝Fresh coriander leaves for garnish
💝Salt to taste
Instructions:
➤Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
➤Heat ghee or oil in a large pan over medium heat. Add cumin seeds, cinnamon stick, cardamom pods, cloves, and bay leaf. Sauté for a minute until fragrant.
➤Add sliced onions and green chilies. Cook until the onions turn golden brown.
➤Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
➤Add the mixed vegetables and sauté for 3-4 minutes until they are partially cooked.
➤Stir in chopped tomatoes, red chili powder, turmeric powder, biryani masala powder, and salt. Cook for a few minutes until the tomatoes soften.
➤Add yogurt and mix well. Cook for another 2-3 minutes until the spices are well combined.
➤Add the soaked and drained basmati rice to the pan. Gently mix it with the vegetable and spice mixture.
➤Pour 4 cups of water into the pan. Bring it to a boil, then reduce the heat to low. Cover the pan with a tight-fitting lid and let it cook for 15-20 minutes until the rice is cooked and the water is absorbed. Do not stir the rice during cooking.
➤Once the rice is cooked, remove the pan from heat. Let it sit covered for 5 minutes to allow the flavors to meld.
➤Fluff the rice gently with a fork. Drizzle the saffron-infused milk over the rice, and garnish with fresh coriander leaves.
