Thirunelveli Halwa

Ingredients:
- 1 cup wheat flour
- 1 cup sugar
- 1 cup ghee (clarified butter)
- A few cashew nuts
- A few raisins
- A pinch of cardamom powder
- A pinch of saffron strands (optional)
- Water as needed
Instructions:
πHeat a tablespoon of ghee in a pan and roast the cashew nuts and raisins until they turn golden brown. Set them aside.
πIn the same pan, add the wheat flour and roast it on low heat until it turns aromatic and golden brown. Make sure to stir continuously to avoid burning.
πIn a separate saucepan, boil 2 cups of water. Slowly add the boiling water to the roasted wheat flour while stirring continuously to avoid lumps.
πCook the mixture on low heat until it thickens and comes together like a halwa consistency. This may take about 10-15 minutes.
πAdd sugar to the halwa mixture and mix well until the sugar dissolves completely. Continue cooking for another 5 minutes.
πAdd ghee, one tablespoon at a time, and mix well after each addition. Continue adding ghee and stirring until the halwa absorbs the ghee and starts to leave the sides of the pan.
πAdd cardamom powder and saffron strands (if using) to the halwa and mix well.
πFinally, garnish the halwa with the roasted cashew nuts and raisins.
πServe the Thirunelveli Halwa warm or at room temperature. Enjoyπ
