Rose cookies (Achu Murukku)
Rose cookies, also known as Achu Murukku or Rosette Cookies, are popular crispy and delicate deep-fried snacks often made during festive occasions in South India.

They get their name from their beautiful rose-like shape. Here's a recipe to make Rose Cookies:
Ingredients:
🏶1 cup rice flour
🏶1/4 cup all-purpose flour (maida)
🏶1/2 cup powdered sugar
🏶1/2 cup coconut milk
🏶1/2 teaspoon cardamom powder
🏶A pinch of salt
🏶Oil for deep frying

Instructions:
🌹 In a mixing bowl, combine rice flour, all-purpose flour, powdered sugar, cardamom powder, and salt. Mix well.
🌹 Gradually add coconut milk to the dry ingredients and mix to form a smooth batter. The consistency should be similar to dosa batter or slightly thinner.
🌹 Heat oil in a deep pan or kadai for deep frying the rose cookies.
🌹 Dip the rose cookie mould (achu) in the hot oil for a minute to heat it up. Then, remove it from the oil and shake off any excess oil.
🌹 Dip the heated mould into the prepared batter, making sure that the batter coats the entire inside surface of the mould.
🌹 Immediately dip the batter-coated mould into the hot oil, but be careful not to fully immerse it. Hold it partially submerged in the oil and gently shake or tap the mould to release the cookie into the oil.
🌹 Fry the rose cookies on medium heat until they turn golden brown and crispy. Flip them occasionally for even frying.
🌹 Once the cookies are cooked, remove them from the oil using a slotted spoon and place them on a paper towel to absorb any excess oil.
🌹 Allow the rose cookies to cool completely before storing them in an airtight container.
