 Milk Peda (Pal Kova)




 Paal Kova, also known as Pal Kova or Milk Peda, is a popular Indian sweet made from condensed milk. It is rich, creamy, and has a fudge-like texture. Paal Kova is a delectable sweet that can be enjoyed on its own or used as a base for other desserts like Gulab Jamun or Rasmalai. It is a classic Indian sweet that is often prepared during festivals, celebrations, or special occasions. 

Here's a simple recipe to make Paal Kova:


Ingredients:

1 liter of full-fat milk

1/2 cup sugar

1/2 teaspoon cardamom powder

A pinch of saffron strands (optional)

2 tablespoons chopped nuts (almonds, cashews, pistachios), for garnish

1 teaspoon ghee (clarified butter), for greasing


Instructions:

Pour the milk into a thick-bottomed wide pan or a non-stick pan and bring it to a boil on medium heat.



Once the milk comes to a boil, reduce the heat to low and let it simmer. Stir occasionally to prevent the milk from sticking to the bottom of the pan.



Continue simmering the milk on low heat, stirring frequently, until it thickens and reduces to about one-fourth of its original volume. This process can take around 60-90 minutes. Be patient and keep stirring to avoid burning.



Once the milk has significantly thickened, add the sugar and mix well. The sugar will dissolve and further sweeten the kova.



Continue cooking the mixture on low heat, stirring continuously, until it reaches a solid consistency and starts leaving the sides of the pan. This should take about 30-40 minutes.



Add cardamom powder and saffron strands (if using), and mix well. This will enhance the flavor and aroma of the kova.



Grease a plate or tray with ghee. Transfer the thickened milk mixture (kova) to the greased plate and spread it evenly using a spatula.



Garnish with chopped nuts, pressing them gently into the kova. 



Allow the Paal Kova to cool completely at room temperature. Once cooled, refrigerate it for a couple of hours to set firmly. 



Once set, cut the Paal Kova into desired shapes, such as squares or diamonds.



Serve the Paal Kova as a delightful sweet treat, and refrigerate any leftovers in an airtight container.
