Ingredients:
💜1 cup idli batter (fermented rice and lentil batter)
💜1 small onion, finely chopped
💜1 green chili, finely chopped
💜1/2 inch piece of ginger, grated
💜A handful of curry leaves, finely chopped
💜2 tablespoons coriander leaves, finely chopped
💜1/2 teaspoon mustard seeds
💜1/2 teaspoon cumin seeds
💜1/2 teaspoon black pepper, coarsely crushed
💜Salt to taste
💜Oil or ghee for cooking
Instructions:
⃟ Heat a teaspoon of oil in a small pan. Add mustard seeds and cumin seeds. Let them splutter.
⃟ Add chopped onions, green chili, and grated ginger to the pan. Sauté until the onions turn translucent. Add curry leaves and sauté for another minute. Turn off the heat and set the pan aside.
⃟ In a large mixing bowl, take the idli batter. Add the sautéed onion mixture, chopped coriander leaves, crushed black pepper, and salt. Mix well.
⃟ Heat a paniyaram pan or appe pan (a special pan with multiple small cavities) and add a few drops of oil or ghee into each cavity.
⃟ Once the pan is hot, pour a spoonful of the batter into each cavity, filling them up to 3/4th of the way.
⃟ Allow the paniyarams to cook on medium heat. After a minute or so, flip them using a wooden skewer or spoon to cook the other side. Drizzle a few more drops of oil or ghee around each paniyaram and cook until both sides turn golden brown and crispy.
⃟ Remove the cooked paniyarams from the pan and repeat the process with the remaining batter until it is used up.
⃟ Serve the Kuzhi Paniyaram hot with coconut chutney, tomato chutney, or sambar.
