Kunafa (Arabian Dessert)
Kunafa, pronounced (Ku-Na-Fah), is a traditional Arabic dessert with many variations in neighboring countries. Lately in my visits to Egypt I have seen a lot of new knafeh ideas but until now my mom's knafeh is the best.Certainly! Here's a recipe for Kunafa, a popular Arabian dessert:
Ingredients:
π1 package of shredded phyllo pastry (Kunafa dough)
π1 cup unsalted butter, melted
π2 cups sweet cheese (such as mozzarella or Akkawi cheese), grated
π1 cup semolina or fine semolina flour
π1 cup sugar
π1 tablespoon rosewater or orange blossom water
π1 cup water
πPistachios or almonds, crushed (for garnish)
For the Sugar Syrup:
π1 cup sugar
π1 cup water
π1 tablespoon lemon juice
π1 tablespoon rosewater or orange blossom water
Instructions:
π₯Start by preparing the sugar syrup. In a saucepan, combine the sugar, water, and lemon juice. Bring the mixture to a boil over medium heat, stirring occasionally.
π₯Once it reaches a boil, reduce the heat and let it simmer for about 10 minutes until the syrup thickens slightly. Remove from heat and stir in the rosewater or orange blossom water. Set the syrup aside to cool.
π₯Preheat your oven to 350°F (175°C). In a large bowl, combine the shredded phyllo pastry with the melted butter. Mix well until all the pastry strands are coated with butter.
π₯In a separate bowl, combine the grated sweet cheese, semolina, and sugar. Mix well to combine.
π₯Grease a round or square baking dish with some melted butter. Spread half of the buttered shredded phyllo pastry evenly on the bottom of the dish, pressing it down gently.
π₯Next, evenly spread the sweet cheese and semolina mixture over the layer of pastry.
π₯Cover the cheese layer with the remaining buttered shredded phyllo pastry, pressing it down gently.
π₯Place the baking dish in the preheated oven and bake for about 30-40 minutes, or until the Kunafa turns golden brown and crispy.
π₯Once the Kunafa is done baking, remove it from the oven and pour the cooled sugar syrup over the hot pastry. Make sure to evenly distribute the syrup all over.
π₯Allow the Kunafa to cool for a few minutes, then sprinkle crushed pistachios or almonds on top for garnish.
π₯Cut the Kunafa into squares or diamond shapes and serve warm. It pairs well with a cup of Arabic coffee or tea.

Note: Variations of Kunafa exist, and you can also add a layer of cream or clotted cream between the cheese and the pastry for added richness.
