Kerala Style Vegetable Stew
Kerala, a state in southern India, is known for its delicious and diverse cuisine. Here's a recipe for one of Kerala's popular dishes called "Kerala Style Vegetable Stew (puttu)"
Ingredients:
〓 1 cup mixed vegetables (carrots, beans, peas, potatoes, etc.), chopped
〓 1 onion, thinly sliced
〓 2 green chilies, slit lengthwise
〓 1-inch piece of ginger, grated
〓 4-5 cloves of garlic, minced
〓 1 cup thick coconut milk
〓 1 cup thin coconut milk
〓 2 tablespoons coconut oil (or any cooking oil)
〓 1 teaspoon mustard seeds
〓 1-2 sprigs of curry leaves
〓 Salt to taste
For Grinding:
〓 1 cup grated coconut
〓 1 teaspoon cumin seeds
〓 2-3 green cardamom pods
Instructions:
πIn a grinder, blend the grated coconut, cumin seeds, and cardamom pods with a little water to make a smooth paste. Keep it aside.
πHeat oil in a deep pan or pot over medium heat. Add mustard seeds and let them splutter.
πAdd sliced onions, green chilies, grated ginger, and minced garlic. SautΓ© until the onions become translucent.
πAdd the mixed vegetables to the pan and stir well to coat them with the onion mixture.
πPour the thin coconut milk into the pan, cover, and simmer until the vegetables are cooked through. It usually takes around 10-15 minutes.
πOnce the vegetables are cooked, add the ground coconut paste to the pan and mix well. Simmer for a couple of minutes.
πStir in the thick coconut milk and simmer for a few more minutes until the stew is heated through.
πAdd salt to taste and garnish with curry leaves.
πRemove from heat and serve hot with steamed rice, appam (rice pancakes), or chapati.
