Gutti Vankaya Kura (Stuffed Brinjal Curry)




 Here's a simple recipe for a popular Telugu dish called "Gutti Vankaya Kura" or Stuffed Brinjal Curry. We make it often at home to go with plain rice or chapati. It is the same as enna badanekai from the North Karnataka cuisine.


Ingredients:

πŸ’£6-8 small brinjals (eggplants)

πŸ’£1 large onion, finely chopped

πŸ’£2 tomatoes, finely chopped

πŸ’£2 tablespoons oil

πŸ’£1 teaspoon mustard seeds

πŸ’£1 teaspoon cumin seeds

πŸ’£1 teaspoon turmeric powder

πŸ’£2 teaspoons red chili powder

πŸ’£1 tablespoon coriander powder

πŸ’£1 tablespoon sesame seeds

πŸ’£1 tablespoon dry coconut powder

πŸ’£A handful of fresh coriander leaves, chopped

πŸ’£Salt to taste


For the stuffing:

πŸ’£2 tablespoons roasted peanuts, coarsely ground

πŸ’£2 tablespoons roasted sesame seeds

πŸ’£1 tablespoon dry coconut powder

πŸ’£1 teaspoon red chili powder

πŸ’£1/2 teaspoon cumin powder

πŸ’£Salt to taste


Instructions:


πŸ’”Wash the brinjals and make a plus (+) slit on each one, ensuring not to cut them into halves.

πŸ’”In a bowl, mix together the ingredients for stuffing: roasted peanuts, roasted sesame seeds, dry coconut powder, red chili powder, cumin powder, and salt.

πŸ’”Stuff each brinjal with this mixture and set them aside.

πŸ’”Heat oil in a deep pan or kadai over medium heat. Add mustard seeds and let them splutter.

πŸ’”Add cumin seeds and sautΓ© for a few seconds until they turn slightly brown.

πŸ’”Add chopped onions and cook until they become translucent.

πŸ’”Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.

πŸ’”Add the stuffed brinjals to the pan and gently coat them with the onion-spice mixture.

πŸ’”Cover the pan and cook on low heat for about 10 minutes, stirring occasionally to avoid sticking.

πŸ’”In the meantime, prepare a paste by grinding together sesame seeds and dry coconut powder with a little water.

πŸ’”Add this paste to the pan and mix well. Cook for another 5-7 minutes until the brinjals are tender and the flavors are well blended.

πŸ’”Garnish with freshly chopped coriander leaves.
