Gutti Vankaya Kura (Stuffed Brinjal Curry)
Here's a simple recipe for a popular Telugu dish called "Gutti Vankaya Kura" or Stuffed Brinjal Curry. We make it often at home to go with plain rice or chapati. It is the same as enna badanekai from the North Karnataka cuisine.
Ingredients:
π£6-8 small brinjals (eggplants)
π£1 large onion, finely chopped
π£2 tomatoes, finely chopped
π£2 tablespoons oil
π£1 teaspoon mustard seeds
π£1 teaspoon cumin seeds
π£1 teaspoon turmeric powder
π£2 teaspoons red chili powder
π£1 tablespoon coriander powder
π£1 tablespoon sesame seeds
π£1 tablespoon dry coconut powder
π£A handful of fresh coriander leaves, chopped
π£Salt to taste
For the stuffing:
π£2 tablespoons roasted peanuts, coarsely ground
π£2 tablespoons roasted sesame seeds
π£1 tablespoon dry coconut powder
π£1 teaspoon red chili powder
π£1/2 teaspoon cumin powder
π£Salt to taste
Instructions:
πWash the brinjals and make a plus (+) slit on each one, ensuring not to cut them into halves.
πIn a bowl, mix together the ingredients for stuffing: roasted peanuts, roasted sesame seeds, dry coconut powder, red chili powder, cumin powder, and salt.
πStuff each brinjal with this mixture and set them aside.
πHeat oil in a deep pan or kadai over medium heat. Add mustard seeds and let them splutter.
πAdd cumin seeds and sautΓ© for a few seconds until they turn slightly brown.
πAdd chopped onions and cook until they become translucent.
πAdd turmeric powder, red chili powder, coriander powder, and salt. Mix well.
πAdd the stuffed brinjals to the pan and gently coat them with the onion-spice mixture.
πCover the pan and cook on low heat for about 10 minutes, stirring occasionally to avoid sticking.
πIn the meantime, prepare a paste by grinding together sesame seeds and dry coconut powder with a little water.
πAdd this paste to the pan and mix well. Cook for another 5-7 minutes until the brinjals are tender and the flavors are well blended.
πGarnish with freshly chopped coriander leaves.
Serve hot with rice or roti (Indian bread). Enjoy your Gutti Vankaya Kura!π
