Besi Billa Bath
A recipe for "Besi Billa Bath," which is a popular South Indian dish. This recipe is for a vegetarian version of the dish. Here's the recipe:
Ingredients:
😘1 cup rice (preferably Sona Masoori)
😘1/4 cup toor dal (pigeon peas)
😘1/4 cup chopped mixed vegetables (carrots, beans, peas)
😘1 small onion, finely chopped
😘1 small tomato, finely chopped
😘2 green chilies, slit
😘1 tablespoon ghee (clarified butter)
😘1/2 teaspoon mustard seeds
😘1/2 teaspoon cumin seeds
😘A pinch of asafoetida (hing)
😘Few curry leaves
😘1/4 teaspoon turmeric powder
😘1/2 teaspoon red chili powder (adjust to taste)
😘Salt to taste
😘Fresh coriander leaves, chopped for garnishing
Instructions:
Wash the rice and toor dal together and soak them in water for about 20 minutes. Drain the water and set aside.
Heat ghee in a pressure cooker or a large pot. Add mustard seeds and cumin seeds. Let them splutter.
Add asafoetida, curry leaves, and chopped onions. Sauté until the onions turn golden brown.
Add chopped tomatoes and green chilies. Cook until the tomatoes turn soft.
Add the mixed vegetables and sauté for a couple of minutes.
Now, add the soaked rice and dal mixture to the pot and mix well with the vegetables.
Add turmeric powder, red chili powder, and salt. Mix everything together.
Add 3 cups of water and stir well. Adjust the salt and spices according to your taste.
If using a pressure cooker, close the lid and cook for 3-4 whistles on medium heat. If using a pot, cover it with a lid and cook until the rice and dal are completely cooked and the water has evaporated. Stir occasionally to prevent sticking.
Once cooked, let it sit for a few minutes before opening the pressure cooker or pot. Fluff the rice gently with a fork.
Garnish with freshly chopped coriander leaves.
Serve Besi Billa Bath hot with raita or some chutney
