Andhra Chicken Curry




     Certainly! Andhra Pradesh, a state in India, is known for its spicy and flavorful cuisine. Here's a recipe for a classic Andhra dish called "Andhra Chicken Curry".  This curry gets its unique flavor from the freshly roasted spice mix. Here is how to make it in the traditional style (gluten-free).


Ingredients:

  • 500 grams chicken, cut into pieces
  • 2 medium onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon fenugreek seeds
  • 10-12 curry leaves
  • 2 tablespoons ginger-garlic paste
  • 2 tablespoons red chili powder
  • 1 tablespoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish


Instructions:

💛Heat oil in a deep pan or kadai over medium heat. Add mustard seeds, cumin seeds, and fenugreek seeds. Let them splutter.

💛Add curry leaves and sauté for a few seconds until they become fragrant.

💛Add chopped onions and cook until they turn golden brown.

💛Add ginger-garlic paste and sauté for a minute until the raw smell disappears.

💛Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.

💛Add the chicken pieces to the pan and coat them with the onion-spice mixture. Cook for a few minutes until the chicken starts to brown.

💛Add chopped tomatoes and cook until they become soft and mushy.

💛Reduce the heat to low, cover the pan, and simmer for about 20-25 minutes or until the chicken is cooked through and tender. Stir occasionally to prevent sticking.

💛Sprinkle garam masala over the curry and mix well. Cook for another 2-3 minutes.

💛Garnish with freshly chopped coriander leaves.

💛Serve hot with steamed rice, roti, or biryani.


Note: Adjust the spice levels according to your preference by adding or reducing the amount of red chili powder.
