 Akkara Vadisal 


     Akkara Vadisal is a traditional South Indian sweet dish made with rice, moong dal, jaggery, milk, and flavored with cardamom and ghee. It is often prepared as an offering to deities during festive occasions. 

    Akkara Vadisal is a rich and creamy sweet dish that is enjoyed by people of all ages. Its divine taste and aromatic flavors make it a special treat for festivals and celebrations. Here's the recipe to make Akkara Vadisal:


Ingredients:

1/2 cup raw rice

2 tablespoons moong dal (split yellow lentils)

2 cups milk

1 cup water

1 cup jaggery, grated or powdered

2 tablespoons ghee (clarified butter)

1/4 teaspoon cardamom powder

A pinch of saffron strands (optional)

10-12 cashew nuts

10-12 raisins


Instructions:

💢 Rinse the rice and moong dal together and soak them in water for about 30 minutes. Then, drain the water and set aside.


💢 In a pressure cooker or a heavy-bottomed pot, add the soaked and drained rice and moong dal along with 1 cup of water. Cook them until soft and mushy. If using a pressure cooker, cook for 3-4 whistles on medium heat.


💢 In a separate saucepan, heat the milk and bring it to a boil. Reduce the heat and let it simmer until it thickens slightly.


💢 Add the cooked rice and moong dal mixture to the milk. Mix well and simmer for about 10 minutes, allowing the flavors to blend together.


💢 In a small pan, heat ghee and fry the cashew nuts and raisins until they turn golden brown. Keep them aside.



💢 Add the grated or powdered jaggery to the rice and milk mixture. Stir well until the jaggery dissolves completely and combines with the rest of the ingredients.


💢 Add cardamom powder and saffron strands (if using). Mix everything well and cook for an additional 5 minutes, stirring continuously.



💢 Turn off the heat and garnish the Akkara Vadisal with the fried cashew nuts and raisins. Mix gently.



💢 Serve the Akkara Vadisal warm or chilled as a delightful dessert.
