Upperi- kerala receipe
Fried banana cubes are coated in jaggery syrup to make this mouth-watering snack from Kerala. It is a must-have dish in the Onam Sadhya spread.
Ingredients of Upperi
π2 cups Raw bananas, de-skinned and cut into cubes
π1 cup Jaggery
π1 tbsp Rice flour
π1 tsp Cumin powder
π1 tsp Cardamom powder
πOil, to fry
How to Make Upperi
π£Soak the cubed bananas in warm water for 4-5 minutes and strain it. Keep it aside.
π£Dry roast the rice flour on medium to low flame. Do not burn the flour. Keep aside.
π£Heat enough oil in a pan and deep fry the bananas until they are crispy and golden brown in colour.
π£Take another pan, pour some water and add the jaggery to it. Boil it till the jaggery melts.
π£Add cardamom powder and cumin powder to it and stir.
π£In the boiling jaggery syrup, add the fried bananas and cook until the former is almost absorbed.
π£Switch off the flame and add roasted flour to it and mix. The rice flour will prevent the sticky-texture of the syrup. Enjoyπ
